Several years back, I was obsessed with Food Network. I mean, I kind of still am, but who has time to get sucked into a marathon of Diners, Drive Ins and Dives with a 5 and 7 year old running around?
One of my favorite chefs is Rachel Ray. I know she grates on the nerves of some, but something about her has always reeled me in. She’s unique, that’s for sure!
I also have had good success recreating her meals! This Buffalo Chicken Pizza is my favorite pizza recipe of all time.
We’ve tweaked it slightly over the years, but the primary flavors are still there!
This can be as quick and easy as you want, or as from scratch as you can make it.
For the super simple version:
- Buy your pizza dough premade
- Grab an already cooked rotisserie chicken and shred the meat, or purchase already cooked shredded chicken
- Use bagged pre-shredded cheese
For the “from scratch” version:
- Make your own pizza dough
- Cook your chicken breast yourself
- Buy really good cheese that you shred yourself
No excuses! Make this pizza! Yum!
Ingredients
- Pizza Dough (this is my recipe)
- Cornmeal (just a pinch)
- 2 tbsp butter
- 1/2 cup tomato sauce
- 1 tbsp Worcestershire sauce
- Hot Sauce to taste (I use Franks and I generally put 2 tablespoons)
- 1 cup shredded Monterey Jack cheese
- 1/2 cup blue cheese crumbles
- 1 cup to 1 1/2 cups shredded chicken breast
Instructions
- Preheat oven to 425
- Meanwhile, in a saucepan melt your butter. Add in your tomato sauce, Worcestershire sauce and hot sauce and heat through.
- Add your chicken to your sauce mixture.
- Grab your pizza stone, pan, baking sheet and sprinkle some cornmeal where you are going to place your pizza dough.
- Place dough on top and drizzle some olive oil on top. Place dough in the oven until it just barely starts to get a bit brown.
- Take dough out of the oven and put your sauce/chicken mixture on the dough (leaving a bit of room at the edges for a crust). Then layer your blue cheese and monterey jack on top.
- Place back into the oven until the cheese melts and the crust is a nice golden brown!
- Serve!

Buffalo Chicken Pizza

My husband and I love this pizza! My kids aren’t a fan of blue cheese, so we generally eat this one ourselves and I make the kids a plain cheese pizza.
