Easy Creamy Lemon Garlic Shrimp Pasta Recipe

This Easy Creamy Lemon Garlic Shrimp Pasta is perfect for special occasions, date night, a meal to impress and entertain a crowd or even for a random clean out the pantry/freezer rainy/snowy day/kids unexpectedly out of school lunch! Inexpensive and quick, but tastes like a million bucks!

Last night, we had a doozy of a storm.

Our house felt like it was under attack by hail. I’m actually shocked that windows were not busted open and that our glass patio table is still intact. It was scary.

We went through Hurricane Harvey a few years ago and I found my fear creeping up to Harvey level at certain points.

Needless to say, we got very little sleep. So when my alarm went off and the first thing I saw was that school was cancelled, I said a prayer of thank you that we were all safe and snuggled in our bedroom with the kids and rolled over and went back to sleep.

However, I have not gone grocery shopping in quite awhile. I have really been trying to deplete our pantry/freezer before hurricane season so I can restock. So we are at bare bones around here food-wise.

My husband is working from home as well and he loves all things lemon, so in my scrounging I found the ingredients to make this Easy Creamy Lemon Garlic Shrimp Pasta! I walked into the kitchen and had this pasta ready to eat in 10 minutes.

I can spend longer making a sandwich!

This Easy Creamy Lemon Garlic Shrimp Pasta uses ingredients most of us can generally keep on hand at all times. The biggest expense comes from the shrimp, and if you are an Aldi shopper, even that isn’t very pricey.

I used the already cooked shrimp and the amazing buttery, garlicy, lemony flavor still permeated the shrimp and tasted like a dish you can get at your local fancy seafood restaurant!

Easy Creamy Lemon Garlic Shrimp PastaThis Easy Creamy Lemon Garlic Shrimp Pasta is perfect for special occasions, date night, a meal to impress and entertain a crowd or even for a random clean out the pantry/freezer rainy/snowy day/kids unexpectedly out of school lunch! Inexpensive and quick, but tastes like a million bucks!

Ingredients:

  • 12 oz angel hair pasta (fyi if you are low carb/keto, use spaghetti squash. It is AMAZING with spaghetti squash too!)
  • 1/4 cup (about 1 good sized lemon) lemon juice
  • 1/4 cup grated parmesan
  • 1 lb cooked medium shrimp (if you have uncooked, that’s fine. Already cooked makes this an easy 10 minute lunch though)
  • 4 tablespoons butter
  • 3 tablespoons minced garlic
  • 1 tablespoon dried basil
  • salt & pepper to taste

Directions:

  1. Boil your angel hair pasta to al dente in salted water. I split my dry noodles in half before I put them in the water.
  2. Meanwhile, melt your butter in a large pan. Add the garlic and cook until nice and fragrant.
  3. Now you will either cook or warm your shrimp in the yummy buttery/garlic goodness.
  4. Season with salt & pepper
  5. Drain your pasta completely and add the drained pasta to your shrimp
  6. Add the lemon juice and sprinkle with the basil. Stir to combine.
  7. Add the Parmesan cheese and stir until thickened.
  8. Taste test to see if you need more salt & pepper.
  9. Serve!
