The cooler weather, the fall events (in Texas, people finally venture out to do non water related activities in the fall! ) and most of all…the FOOD!

One tip I learned on Food Network a few years ago has made a HUGE difference in how I make chicken soup nowadays!
Lemon!
A bit of lemon in chicken soup is amazing. Chicken soup is my favorite soup as a rule, but add lemon and it takes on a brightness that can’t really be described.
Which means you are just going to have to make this and eat it for yourself 😉
Lemon Chicken Soup
From Damn Delicious
Ingredients:
- Olive Oil
- 1 lb boneless skinless chicken thighs cut into bite sized pieces
- 1 diced onion
- 3 diced carrots
- 3 diced stalks of celery
- 5 cups chicken stock
- 3/4 cup orzo or white rice
- 2 bay leaves
- 1/2 tsp dried thyme
- 1 sprig of rosemary
- Juice of 1 lemon
- 2 tablespoons parsley leaves
